Pepper is the most widely used spice in the world and known as “king of the spices” and it’s native to South Asia. Ceylon pepper is particularly favoured worldwide as it’s quite rich in piperine the alkaloid which lends it a distinct pungency.
Pepper is produced as black pepper which is the dried whole fruit. White pepper is produced by removing outer pericarp and it’s also available in crushed and grounded forms. Pepper is mainly used in hot range cooking and flavoring agent in the food industry. The taste of Sri Lankan black pepper is richly aromatic. More over Pepper oil and oleoresins are extracted and manufactured as value added products. It also uses in perfumery and pharmaceutical industries as well.
