In the cinnamon family the highest grade cinnamon comes from Cinnamomum Zeylanicum a plant distinct to Sri Lanka (Ceylon). Though the world largest producer and exporter of cinnamon. Sri Lanka is producing 90% of cinnamon to the world market.
The Ceylon cinnamon is the dried bark of Cinnamomum Zeylanicum belongs to the family Lauraceae. It’s an evergreen perennial plant with spirally arranged, broad laminated dark leaves having palmate veration. It enriched with delicately fragrant aroma and a warm sweet flavour. Cinnamon is the most important agent among the spice sector in Sri Lanka. It mainly used for flavouring and condiment for aroma. Since ancient days it also used as medicine and perfumery material. At present the cinnamon is widely used in bakery products, pharmaceutical preparations and cosmetics worldwide.
More over the essential oil distilled from it’s bark fragments, as it’s used for food, liqueur, perfume and drugs.
